Há tempos o arroz deixou de ser o ‘melhor amigo do feijão’. São inúmeros tipos encontrados no mercado, cada um com suas qualidades e indicações. Confira a seguir uma pequena seleção feita pela nutricionista Renata Baldin.
Esse tipo de grão sofre um processo industrial de fervura, que enriquece a composição de nutrientes, se comparado com o branco.
A cor se deve à antocianina, substância com poder antioxidante que reduz danos à saúde, como doenças cardiovasculares e envelhecimento precoce. É rico em ferro e zinco.
Com grãos mais curtos, tem grande quantidade de amido. Sua versão integral conserva melhor os nutrientes.
Um tipo mais adocicado e com menos amido que o arroz comum, tem boa quantidade de fibras, minerais, ferro e proteína.
Tem muito mais fibras e proteínas que o branco. Além disso, concentra ômega-3, vitaminas A, C e D. Por isso, é bom para prevenir hipertensão arterial, diabetes, doenças de pele e lesões nas células. Como demora muito para cozinhar, use panela de pressão.
